If you don't mind kimchi, here's one:
Cook your udon according to your package's directions, drain and rinse and throw it in a bowl. Add 1.5cups chopped kimchi, 1 TBSP kimchi juice (or more to taste), 2.5 tsp sugar, 2 tsp toasted sesame oil, 1 tsp white vinegar, salt to taste. Mix, taste, adjust seasonings. Garnish with thinly sliced green onions. Enjoy. Oh yeah, it serves 1-2 people.
